Hi glad (!) I am Spanish and I am a granddaughter of celiac six years. In the European Community, we are working very hard to achieve early diagnosis are only diagnosed 20% of celiacs sick, we are creating laws to ensure that children have in their school menus without gluten, a proper labeling for the problem .... of celiac patients are not inside their homes, the outside in the street, college, restaurants .... schools catering to be included in their classes celiac disease, governments, ministries of health should create protocols for this disease. There are many wonderful blogs, but cooking and dissemination? and demand? Celiac sprue to bring the street, try to leave a world our children easier celiacs.
